Maytag Blue
Maytag is a blue cheese produced by Maytag Dairy Farms from the milk of prize-winning herd of Holstein cattle. The farm located outside Newton, Iowa has been making this handcrafted cheese since 1941 using traditional methods of curing. Even today, the blue cheese is not produced in huge quantities as the cheese makers want to ensure that only the best quality cheese reaches the consumers.
Maytag Blue cheese is ripened over six months during which it develops a dense, crumbly texture and semi-sharp flavour. Every bite of Maytag melts in the mouth releasing a slightly tangy flavour with a lemony finish. With its pungent odor, the cheese might not suit everyone’s tastes. The cheese delivered in decorative silver foil tastes delectable when crumbled into salads, crackers or melted onto a burger.
Also, try it with glass of ale or lager. Other cheeses from the farm include Natural White Cheddar, Cheddar Cheese Spread and Brick & Baby Swiss.
Pepper Jack
Pepper Jack is a derivative of Monterey Jack, the original “American” cheese invented by Mexican Franciscan friars of Monterey, California. As the name suggests, the cheese is flavoured with sweet peppers, rosemary, habañero chilies and garlic and spicy jalapeños for an extra kick.
This semi-soft, open textured cheese is spicy to taste yet leaves a delicate and buttery taste in the mouth. It is often eaten with quesadillas, crackers or on hamburgers. Pepper jack can also go well with jalapeno peppers, melons, grapes, pickled vegetables, and olives.
Yancey's Cheddars
Yancey’s Fancy cheese factory produces a variety of different flavors, which can be found at many retail stores nationwide. They specialize in making "artisan cheeses," which are hand-crafted in the old style (with some new techniques) for the most authentic cheese flavor. Their "Finger Lakes Champagne Aged Cheddar Cheese" is made with real champagne from the Finger Lakes region, specifically from Hunt Country Vineyards.
Yancey's Fancy is the largest fresh cheese curd manufacturer on the East Coast. The company utilizes the local milk supply in western New York when crafting their products.
Yancey's Fancy also has a buffalo mascot named "Hot Stuff," which makes appearances at sponsored and promoted events. The mascot also appears on the label of their "Buffalo Wing Original Hot Sauce Cheddar."
Yancey's Fancy won a gold medal at the 2010 World Championship Cheese Contest in Madison, Wisconsin, for 'Best of Class, Jalapeño & Peppadew Cheddar. The cheese also won a 2010 New York State Fair Grand Champion award that same year.
Cypress Grove's HumboldT Fog

As Humboldt Fog matures, the creamline develops and the flavor intensifies.
Cypress Grove's Truffle Tremor
Truffle Tremor is a soft-ripened goat's cheese produced by Cypress Grove Chevre, of Arcata, California, in Humboldt County. As the name suggests, it combines the earthiness of the Italian black summer truffles with tangy, lactic flavours of goat cheese. This elegant cheese has a dense, champagne-white interior mottled with small, delicate pieces of black truffle. As the cheese ripens, the paste becomes softer just under the rind, ensuing more herbaceous flavour.
Serve the cheese with Barleywine, Trippel or wines such as Riesling, Zinfandel or Cabernet Sauvignon.
The cheese won Super Gold award at World Cheese Awards 2014, Gold at California State Fair Cheese Competition, 2009, 2010 and First Place at World Championship Cheese Contest 2014.

Cypress Grove's Midnight Moon
Midnight Moon is a matured, gouda-style cheese produced in the Netherlands and sold under the Cypress Grove label. Made from pasteurized goat's milk, the cheese is aged for six or more months to produce a dense and smooth ivory-coloured paste that develops a slightly granular mouth feel as it matures off to the 12 month stage. Flavours are of lovely brown butter with intense caramel undertones.
Serve the cheese with Belgian Dark, Stout or Trippel or wines such as Syrah, Zinfandel or Sweet Sherry.
The cheese has won Gold award at World Cheese Awards 2014, Best in Class, World Championship Cheese Contest, 2010 and Best New Product in Show, NASFT sofi Awards, 2002.
Cabot Clothbound Cheddar
Cabot Creamery asked us to age a special batch of cheddar, sparking a revolutionary collaboration. After more than a decade the cheese has developed into the cornerstone of our collection. After it comes to the Cellars, we coat the young cheese in lard and add an additional layer of cloth. The cheeses ripen in a specially calibrated vault in our Cellars, where they are constantly brushed, turned, and monitored for quality.
